We are very proud and excited to offer this beautiful coffee from Finca Calle San Juan of the Las Lajas micromill. Finca Calle is one of several farms belonging to the third-generation coffee producing Chacon family. The Chacons own and operate the Las Lajas mill that separates and processes the coffee cherries from their family farms with exceptional attention to detail at every step of the way. They are devoted to organic and sustainable farming practices and water use is very minimal since the coffees are natural/dry/honey processed. This particular microlot is comprised of Caturra and Catuai and was processed using what the Chacon family categorizes as a red-honey drying method. The Chacons are pioneers in the ways of drying coffee. They experiment with frequencies of turning their coffees on the drying beds in order to achieve different flavor profiles. Their “red-honey” drying method leaves the mucilage of the coffee intact during the drying process and the coffee is turned several times a day. The results in the cup are a true testament to their expertise, passion and even creativity: A creamy texture with a sweet and tart profile of cherry cola and berries with fruited aromatics and cocoa to round out this incredible coffee.
